Makes: 1 Serving

Kitchen Gear: 

Small bowl
Fork or whisk
Small skillet (nonstick if you have it)
Spatula

Ingredients

1  
large egg
1⁄2 cup
flat leaf spinach, chopped
1  
scallion, white and green chopped
2 teaspoons
Boursin or feta cheese, broken up into little pieces
1⁄2 teaspoon
olive or canola oil

Instructions

  1. Crack the egg on the rim of the bowl, and let the egg slide into the bowl. Throw away the shell.
  2. Beat the egg with the fork or whisk until it's evenly yellow. 
  3. Add the spinach and scallion to the bowl and mix well. (It will look mostly like spinach but don't worry, that's how it should look.)
  4. Add the cheese.
  5. With the help of your adult, put the skillet on the stove and turn the heat to medium. Wait two minutes for the skillet to heat up.
  6. With the help of your adult, add the oil.
  7. Add the spinach and egg mixture and let it cook until the edges start to firm up, about 2 minutes.
  8. Using a spatula, with the help of your adult, flip the mixture over and cook about 1 minute. 
  9. Carefully transfer to a plate and enjoy right away.
